We make Daily Defence on the Sunshine Coast in Queensland, just north of Brisbane. We're a Bellarine family in Victoria — the tallow comes from New Zealand, and the bottles are made and filled up on the Sunshine Coast.
The tallow.
Sourced from grass-fed cattle in New Zealand — selected for quality, rendered slowly at low temperature so the fatty acids stay intact. It arrives in food-grade containers, and we treat it the way you'd treat butter: cool, clean, careful.
The blend.
Mixed in small batches by hand. The current recipe makes about 200 bottles per run. The variation between batches is, frankly, tiny — but each one is checked, signed off, and dated before it goes anywhere.
The bottles.
Filled in a small commercial kitchen on the same morning they're labelled. The label is printed locally. The cap is sourced from an Australian manufacturer. The cardboard shipping box is recycled.
This isn't a story we tell to justify a price. It's just how we make things.
