We make Daily Defence on the Sunshine Coast in Queensland. Just north of Brisbane, on the same beach we walk every morning.
The tallow.
Sourced from grass-fed cattle in New Zealand — selected for quality, rendered slowly at low temperature so the fatty acids stay intact. It arrives in food-grade containers, and we treat it the way you'd treat butter: cool, clean, careful.
The blend.
We mix small batches by hand. The current recipe makes about 200 bottles per run. The variation between batches is, frankly, tiny — but each one is checked, signed off, and dated before it goes anywhere.
The bottles.
Filled in our small commercial kitchen on the same morning they're labelled. The label is printed locally. The cap is sourced from an Australian manufacturer. The cardboard shipping box is recycled.
This isn't a story we tell to justify a price. It's just how we make things.
